So there was this time that I went camping….

and it was SO MUCH FUN! My best friend and I had planned this thing weeks before it was even time to leave. We were going to go to Zion National Park, in Southern Utah, which is only a 4-5 hour drive away from where we live. We were going to spend 3 nights there and go hiking and be amazed at how beautiful everything is. But then the government shutdown. And we thought we couldn’t go.

But then, the day before we were supposed to go, the governor of Utah opened up Utah’s national parks! So we were off!

I packed a bunch of apples, and veggies, peanut butter, and then a giant container of trail mix. Trail mix for days, yo.

On the way there we met some really cool, cute guys in a car next to ours. That was an adventure in itself. They ended up setting up camp with us and we all went hiking the next day together.

ANGELS LANDING. This was the scariest hike I’ve ever been on in my life. I’ts around 5.4 miles round trip, steep uphill the whole way, and not for those who are afraid of heights. I am terrified of heights, and this hike it basically just one huge, tall, path across the ridge of a mountain with only a chain to keep you from falling off. I slipped a couple times and was all, Well, it’s been real. Adios, life. But luckily I didn’t die, and I had my best friend and my new friends to keep me from freaking out too much. By the time i got to the bottom though, my knees were visibly knocking. The hike took most of the day, because we got started a bit late.

We then went and hiked to the Emerald pools, which were beautiful.

The next day the boys left to continue their adventures at Bryce Canyon, which is nearby. My best friend and I stayed at Zions and hiked to the hanging gardens and to the weeping rock, which both had fabulous views of the canyon and the Virgin River.

The next day we drove home, and it was back to life as normal. All in all, it was a fantastic trip, and I can’t wait until i get to go on a camping and hiking trip again.

My Raw Vegan Adventure: Update

Alright, so I’ve been bad. I’ll admit it. My plans that i had at the beginning of my 60 day Raw Vegan Adventure fell through. I ended up eating a ton of non-raw things because i was surrounded by them and i couldn’t help myself! And trust me, I’m paying the price with all the bad feels that come with over indulging on your favorite foods.

SO. I am going to start again. And this time it’s for real. My padre recently bought a dehydrator for the apples on our tree, and a new Vitamix (because i broke our past two blenders with the crazy amount of blending i was doing -.-). So now I feel like i am ready. I CAN DO THIS. I’m excited! Raw cooking is one of my favorite things to do, so this is going to be a party!

This time around I am going to be sure to not over do it on the nuts and seeds. I think that was my biggest problem with my raw vegan endeavors a couple weeks ago. I ate way too many fatty things and got really sick of it really fast. I wasn’t feeling as good as i would have if i stuck with mainly fruits and vegetables.

Fruits and veggies have a way of making your body feel invisible and I love that feeling! So i can’t wait to get this show on the road!

My 60 Day Raw Vegan Adventure: Week 1

I’m calling it an adventure because, lets face it. That sounds more fun than say, detoxification (i hate that word-its like saying ‘diet’, which is not what this is), or challenge, or even journey. All of those sound like they take a lot of work. Adventures are supposed to be fun, right? So its an adventure.

Lately I’ve been feeling like i have a lot of gross stuff inside me. Like I overdosed on tortilla chips and vegan breads and desserts. I haaaate feeling like this, so i decided i needed to fix the problem and do a 60 day detox reboot. I’m going to reset my body before Thanksgiving rolls around so I am that much less sick feeling when it comes time to gorge on Vegan stuffing and mashed potatoes and mushroom gravy. XD

Here’s my plan:

  • Eat 98% raw vegan for 60 days. I say 98% because there are some things that i just cannot eat raw. Like the eggplant that i have in my fridge right now. I have to cook that guy, or bad things will happen. Very bad things. And also, I’ve learned through other raw adventures that my body does best when i incorporate some cooked things into my diet. This means that at least twice a week I need to have something cooked (probably a cooked vegetable). Other than that, totally raw vegan
  • I also want to run all my problems and stresses out. Running sets me straight, and if i can get to where i need to be mentally and nutritionally, than my body will have nothing else to do but cooperate and feel great! :) So I’m going to run as much as possible in those 60 days. The goal is at least 5 days a week, averaged around 5-6 miles a day. I’m excited!
  • I want to start each day out with a glorious green smoothie. I read on this lovely lady’s instagram that green smoothies are the best way to start the day, and so i’m going to take her advice and give it a try!

The Truth About Hydrogenated Fats

For one of my health promotion and education classes this semester, I get to do a presentation on Nutrition! For part it I’m talking about Hydrogenated fats, because they are one of my biggest issues with processed foods that people regularly consume thinking that they are reasonably healthy for them. Anyway, I thought my blog was the perfect place to practice exactly how I’m going to lay the information out for my class, so here you go.

Hydrogenated Fats, and Why they piss me off. 

Where do we find Hydrogenated fats?

Hydrogenated oil is in a surprisingly large amount of foods that we encounter on a daily basis. It is the number one ingredient in margarine, so anything with margarine in it is going to have a lot of hydrogenated fat. It is in biscuits, cakes, frozen foods, and a lot of dairy products.

Another name for hydrogenated oil is trans fat. That term is familiar, right? Most people know that it is something that they should avoid, right under saturated fat when they are looking at nutrition labels. But a lot of people think that when they read “hydrogenated vegetable oil” on a label, they are just eating a sort of different type of vegetable oil. And that’s basically what the label says. Most nutrition labels don’t say anything about there being any trans fat in the product, and therefore people have no idea what they are actually putting in their bodies. Messed up, right? Yeah, I think so too, but that’s the way it is.

On this random label I found on Google shows, the fat information says that there are no trans fats in the product, but when you actually read the ingredients, you see that there are lots of hydrogenated oils (or in other words, lots of trans fats).  So, READ THE INGREDIENTS before you come to the conclusion that there are no harmful fats in the foods that you are eating.

What exactly is the deal with fat?

Here’s what you need to understand about fats. Fat is not just fat. The caloric value doesn’t change depending on the type of fat, but the way that it affects your body does change. Saturated fats clog up the arteries, and unsaturated fats are better able to be broken down by the body.

So what’s different about the oil if is ‘hydrogenated’?

Hydrogenated oil is an artificial fat. It is vegetable oil that has been changed in such a way that it no longer has any of the health benefits of vegetable oil, and is even worse for you than normal saturated fats. This is because it  has been pressurized with hydrogen to make it solid (and therefore more preservable, and more useful in processed foods).  The hydrogenation process gets rid of all of the essential fatty acids within the vegetable oil and turns it into a fat that acts just like a saturated fat in the body.

Now for the stuff that’s a tiny bit more scientific. The more hydrogen in a fat, the more solid it becomes, and therefore the more it gets stuck in your arteries. Saturated fat has no more room for hydrogen to be added to it, which is why it is solid. (Unsaturated fats have room for at least one more hydrogen to be added to them, depending on the type of unsaturated fat). The basic process of hydrogenation is as follows:

  1.  Vegetable oil is mixed thoroughly with fine particles of nickel or copper.
  2. It is then heated to a very high temperature (about 200 degrees celsius) and held at that heat for 6 hours.
  3. Meanwhile, hydrogen gas is pumped through the mixture at high pressure, and then the excited hydrogen atoms penetrate the vegetable oil molecules and chemically change them into ‘transfats’ (‘trans fatty acids’). These are new, complex substances that are not found in nature, except at low levels in some animal fats.
  4. The mixture is then cooled down to form tiny hard plastic-like beads. These hard beads are known as ‘hydrogenated oil’.
  5.  These beads are then added to other fats and made into the products that we consume on a daily basis.

Sounds pretty unhealthy, doesn’t it? I always feel that if something has been changed and messed with that much, its a bad idea to put it in my body.

So how do i avoid it?

Here’s a basic rule that i follow. If its solid at room temperature, you shouldn’t be cooking with it or putting it in your body. Stick with olive and vegetable oils. They are much easier for your body to break down, and will provide you with the essential fatty acids that your body needs.

If you absolutely have to use either butter or margarine, CHOOSE BUTTER. Margarine may be vegan and vegetable based, but it is harder for the body to break down than butter is. So if you have to choose, go with butter.

Also, READ NUTRITION LABELS. That is the number one most important thing that you can do when eating processed foods. If you know what is in it, you are less likely to binge eat on it, or maybe less likely to eat it at all. It only takes a second, and it is a big investment into  your health, and into your future.  Avoid anything that says it has hydrogenated oils. There are always other more healthy options when it comes to your favorite snacks. And if you don’t like those other options, think about eating less of those foods that do contain hydrogenated fats.

Why am I vegan?

Whenever someone finds out that I’m vegan, the first thing they ask is:

“Why the hell would you do that?”

And I’m always like “uhhhh…. why the hell would I NOT do that?”

Here’s the thing. I’m not vegan for the reason that most people expect me to be. I’m not in it for the animals. Don’t get me wrong, I love the animals, I really do. And being vegan has just made me love the animals more. But its not because of them. I’m vegan for the feel-good food. There’s something about eating fresh, natural, low calorie, low fat food that just gets me going. ;) The vegan lifestyle makes me feel better than any other diet/lifestyle, and so that’s why I do it. It makes me feel good! So why the hell would I not want to do it? And you can’t argue with that. One of my favorite quotes is,

“If something feels really, really good, it can’t be bad, right?”- No idea

And I legit think that that’s true. In almost every situation, if it feels good to you then it can’t be bad. Not everyone is going to agree with you or think that you should do it, but if it feels good to you, then go for it. Cause no one can tell you that you aren’t allowed to feel good.

Anyway,  so that’s why I’m vegan. I gave it a try, and I loved it, so I stuck with it. It works for me. :)
